Bitter chocolate sauce


  • 50g good quality dark chocolate (at least 70% cocoa solids. I use 72%)

  • 100ml double cream

  • Pinch salt

  • 1 tps caster sugar


  1. Chop chocolate up finely and put into a heat proof bowl and add salt on top

  2. Put cream and sugar into a pot and bring to the boil

  3. When cream has just boiled take off heat and pour over the top of the chocolate. Don't stir yet.

  4. Let cream mixture melt the chocolate for a minute or two

  5. Stir thoroughly until chocolate has completely melted and mixture is incorporated
