Buffalo chicken lettuce cups

This recipe is for 3-4 lettuce cups. If I am making it for myself as a main I put the mixture in 3 lettuce cups but there is enough to split between 4 lettuce cups if you are making it at a starter or as part of a buffet


  • 1 chicken breast

  • 20g red onion - diced

  • 20g cucumber - diced

  • 20g tomatoes - diced

  • 20g grated cheese (optional)

  • Around 30ml buffalo wing sauce

  • 3 or 4 leaves iceberg lettuce


  1. Grill chicken breast for around 10 minutes or until cooked through

  2. Once cooked use 2 forks to shred chicken breast and toss through sauce

  3. Wash and pat dry lettuce leaves

  4. Share chicken breast between leaves and top with diced vegetables

  5. Sprinkle grated cheese on top if using

You can also add blue cheese dressing, ranch dressing or sour cream as a topping
