Chocolate, avocado mousse - vegan

Thought I would give this a go and try to make a vegan version since I already have a mousse recipe using cream. It does have a slight after taste of avocado which I really enjoyed. I changed up some of the recipes I found and the consistency of this was perfect.

Ingredients - serves 4

  • 2 avocados

  • 100g dark chocolate 70-75% cocoa solids (I used 72%)

  • 1 tsp ground rock salt

  • 1 tbls caster suagr

  • 2 tbls honey

  • 5 tbls coconut milk (you caould also use almond or if you're not vegan cows milk)

Method

  1. Melt chocolate in a bowl over simmering water

  2. While chocolate is melting scoop insides out of avocados and blend - I used a stick blender 

  3. When chocolate is melted add all other ingredients (except avocado) to it, remove from heat and stir well to combine

  4. If you blended avocados in a jug blender then add an ingredients to it, blitz for 1 minute. If you used a stick blender then add avocado to chocolate mixture and blender for 1 minute.

  5. Transfer mixture into 4 ramekins/small servings dishes and refrigerate for at least 30 minutes.
