Crispy sweet potato fries
There is nothing worse than soggy sweet potato fries! Getting them to be crispy every time took me a bit of practise and a few different recipes. This one is now fail proof!
There are 3 things I discovered as the common things needed. The first is to use baking paper to bake them, the second is to lightly coat them and the third is cook them on a lower heat for longer.
Ingredients

5 sweet potatoes

3 tbls sunflower oil

4 tbls cornflour

1 tbls paprika

1 tps rock or sea salt

1 tps cracked black pepper

Method

Preheat oven to 150oC (fan)

Cut potatoes into strips about 1 cm wide (i keep skins on) and par boil for about 5 minutes

Drain off water completely but keep potatoes in pot

Put baking paper on a baking tray and add oil, put into the oven to preheat oil

Add cornflour, paprika, salt and pepper to pot, put lid on and shake to coat potatoes with mixture

Taking baking tray out of the oven and transfer potatoes to mix (be careful oil doesn't splash)

Bake for around 35 minutes until crisp
