Honeycomb recipe
My recipe for honeycomb or yellowman as we call it in Northern Ireland. Your dentist won't thank me for this but you will. It's very easy to make, but the secret to getting lots of air into it, is to pour it into a baking paper lined bowl to cool not something flat.
Make it in a large pot so it doesn't bubble over when you add the bicarb.
It's delish coated in chocolate - just melt some chocolate dip it in and let it set. Or crumbled it over ice cream.

Ingredients

150g caster sugar

4 tbls golden syrup

1 1/2 tps bicarb of soda
Method

Put sugar and syrup into a large pot on a medium heat until sugar is melted and mixture is golden brown, the further you take this the more bitter it will be.

Remove from heat and immediate add bicarb

Mix quickly until bicarb combined

Transfer to large bowl lined with baking paper until cool
Tip - when any leftover mix cools around edge of your pot it can harden run under very very hot water or boil kettle and pout it over to dissolve hardened mix.
