Meringue kisses

Easy to make meringue kisses. Perfect to decorate cakes with or to eat with cream and fruit. These also make great gifts or wedding favours!

Ingredients - Makes around 20 meringue kisses

  • 1 large free range egg white

  • 100g caster sugar

  • Pinch of cornflour

  • Food colourings (if desired)

Method

  1. Heat oven to 120C/100C fan/Gas ½. Line two baking sheets with baking paper.

  2. Beat the egg whites until they are foamy and doubled in size. Add the sugar, 1 tbsp at a time, while you continue to whisk. The meringue will become thick and glossy and should hold up in stiff peaks on the beaters when it is ready.Add the pinch of cornflour with the last spoon of sugar.

  3. Fit a piping bag with a round or star nozzle. Hold it vertically to the baking sheet and gently squeeze, pulling the bag up and away to make a peak.

  4. For colour-striped meringues paint food colouring gel in stripes onto the inside of the bag, then fill with meringue and pipe as before.

  5. Bake for 1 hr. Once cool, you can decorate with edible glitter or lustre powder.
