Salted caramel sauce
Ingredients
150g granulated sugar
125ml of double cream
10g salted butter
Pinch rock salt/sea salt
Method

Melt the sugar in a pot over a medium heat until it goes dark brown, take it as far as you can without it smoking

Remove from the heat and add the salt and about half of the cream and whisk through. The mixture will really bubble up so be careful.

Once it calms down add the rest of the cream and keep whisking

If the mixture goes lumpy return to the heat and whisk until lumps have melted

Put into a heatproof container and put into the fridge to cool and store
I love this gooey, rich and easy to make salted caramel sauce. It makes a great dipping sauce, it's delicious poured over ice cream or used in sundaes. Sometimes I like to eat it with just a spoon!
