Walnut and chocolate biscotti

Any time I tried to find a biscotti recipe online the recipes were enough to make about 40 biscotti. They all insisted you couldn't use a fan oven but my new oven doesn't have an option for cooking without a fan.

So I came up with my own.

I add chopped walnuts, milk chocolate and dark chocolate to mine but you could add any combination of nuts, dried fruits, chocolate or citrus zest. Just stick to the quantities.

This makes around 12, we ate some and I used some for another dessert before I took the photo (oops).

  • 85g plain flour

  • 85g caster sugar

  • 1/2 tbls baking powder

  • 1 large egg

  • 30g finely chopped walnuts

  • 30g finely chopped dark chocolate

  • 30g finely chopped milk chocolate

  1. Preheat oven to 140oC (Fan)

  2. Sift flour, sugar and baking powder into a bowl and mix.

  3. Lightly beat egg

  4. Make a well in the middle of the flour mixture and add egg

  5. Mix egg through the mixture until well combined

  6. Add nuts and chocolate and mix through

  7. Tip mixture onto a lightly flour surface and knead together

  8. Shape into a log and place on baking paper on a baking try, bake for 30 minutes

  9. Remove from oven and turn oven temperature up to 180oC

  10. Cut log into slices around 1inch thick

  11. Place slices back on baking paper on their side and cook for 6 minutes

  12. Turn slice and cook for a further 6 minutes

  13. Remove and allow to cool.
